New Aces ships the highest quality product possible and meets customer specifications in the most of demanding of markets, including Japan, Korea, and the European Union. We not only meet these standards, we understand the food safety requirements for each country. We are flexible and always aim to meet domestic and international demand in the marketplace because of our traceable processes and strategically constructed plant.

Traceability has become very important to our customers. It’s something our customers expect — and consumers demand. We’re entirely committed to the most traceable processes and utilize the highest quality technology. Beginning with the receiving process, each load is assigned a unique individual lot number. That lot number is then traced from receiving as it goes into cold storage, through production, all the way until it is packaged. We also track our packaged materials, including packaging vendors and suppliers. We never mix lots until shelled and packaged, so we can ensure proper traceability all the way back to the field. As Humberto Reyes, Quality Assurance Manager mentions, “We know with 100 percent accuracy where each pecan has come from, what processing treatment it has received, and where it’s going.”
The plant was designed and constructed with food safety as the number one priority. Our food safety program was built with segregation in mind, so each room has its own dedicated purpose. Our continuous monitoring controls food safety throughout the process.
Consistent, process-driven sanitation isn’t just a box to check. It’s part of our culture. We adhere to a detailed daily, weekly, monthly and semi-annual cleaning schedule. Our sanitation program is unique to the facility, with procedures that are validated and verified.

Daily
Managers are responsible for cleaning their own stations at the completion of both shifts. This is the most effective way to ensure the machines are properly handled because each manager is an expert on his or her machine.

Weekly
We clean at the end of each lot, allowing a clean break from the end of one production lot to the beginning of the next production lot. Our weekly, routine cleaning process targets all food contact surfaces.

Semi-Annual
We combine a semi-annual deep clean with preventative maintenance checks. This is where we deep clean and disassemble equipment — including boards and panels — and vacuum electrical control boxes. The goal is to maintain a pest-free and dust-free environment while maintaining the integrity of the equipment.

We clean according to equipment type, using both wet and dry cleaning methods such as foam cleaning agents and pressurized hot water to help remove soils and sanitization applicators.
Our sampling program is two-fold: product sampling and environmental sampling. We’re looking to meet and exceed not only customer standards, but also our internal standards. We continuously conduct product sampling every 600 pounds throughout production, resulting in a consistent and uniform product. Additionally, we rigorously monitor our entire plant environment by implementing our Environmental Monitoring Plan. This plan includes precise sampling of all food contact surfaces, equipment, utensils, ceilings, floors and walls.
From day one, our training program was something our entire team, from the partner level down, wanted to emphasize as a priority. We continue to dedicate significant time developing each individual — from the first day on the job — to not only understand the job, but understand our standards. Our goal is to empower and encourage each employee to make good decisions at every turn. In fact, each employee may spend a total of 22 credit hours learning about food safety, personal and plant safety, and procedures specific to their areas.

Our pecans are packaged in food-grade corrugated boxes, with Michelman coating inside and food-grade parchment paper lining the interior top and bottom of each box; for our Halves through Large sized pieces product. Medium through Meal sized product is packaged in a food-grade bagged liner within each box. Markings on the carton include Product Description, Product Code, Lot Number, Manufacturing Date, Serial Number, Pallet number, Net weight, Kosher, and Origin.

For domestic orders, boxes are then palletized on a standard 48" x 40” standard GMA pallet with a stack pattern of ten 30 lb. boxes per layer by six boxes high for a total of 60 cases per pallet. Approximate fully stacked dimensions are 48”x40”x73”.

For international oversees orders, product is offered in vacuum-sealed bags to add an additional layer of protection from odorous foods, providing a barrier to insects, airborne contamination and product moisture absorption. Cases are shipped on slipsheets in a pattern of 10 boxes per layer by six boxes high for 40’ and 20’ containers.

We generally sell 30lb cases and for our specialty customers upon request only, we offer 5lb cases and 1400 bins/totes.
